INGREDIENTS

1/2 cup extra virgin olive oil or avocado oil

1/2 cup good quality maple syrup ( I reduce mine a bit..up to you)

3 cups quinoa flakes

course sea salt

1 1/4 cup roughly chopped walnuts

1 1/4 cup chopped pumpkin seeds

3 tbls flax seeds

1 1/2 cup dried fruit of your choice

 

INSTRUCTIONS

Preheat oven to 400 F

whisk together the olive oil and the maple syrup in a large mixing bowl and add the quinoa flakes.  combine thoroughly.  Spread the quinoa on a parchment lined baking sheet and sprinkle with a pinch of salt. Roast stirring every 10 minutes until the flakes are dried and crunchy about 25 minutes. Let the quinoa mixture cool completely before stirring in your dried fruit.  store in an air tight container for up to 2 weeks.

TIPS:  I sprinkle over yogurt, eat with almond milk, use to sprinkle over the chocolate on my homemade granola bars
