-2 pounds grass-fed ground beef

1 large onion diced

1 cup cooked sweet potato

1 cup almond flour

2 Tbs coconut flour

1 egg (room temp is best)

1 cup paleo ketchup

3 Tbs coconut aminos

2 tsp salt

1 tsp garlic powder



1/2 cup paleo ketchup

2 TBS coconut aminos

1 Tbs honey



  1. preheat the oven to 350 and line a sheet or roasting pan with a piece of parchment paper.
  2. This is an optional step: Place diced onion and a little coconut oil in a pan and saute until softened and translucent.  About 5-7 mins.
  3.  In a large bowl, mix beef, onion, sweet potato, almond flour, coconut flour, egg, ketchup, coconut aminos, salt, and garlic powder together.  My hands are my best tools:)  Hint hint!  Mix until just combined.  Do not over mix or your meatloaf will be tough.
  4.  Form into a loaf shape and place in pan.
  5.  Mix glaze ingredients in a small bowl and scoop on top of the meat loaf.
  6.  Bake for 60 minutes and remove from oven.  Carefully scoop out all grease into a jar or bowl.
  7.  Place back in the oven for 30 minutes or until a thermometer reads 160- 165 degrees.
