–1/2 medium yellow onion

-1 Tbs olive oil

-1 cup almonds soaked over night

-1 large clove of garlic

-1/2 cup water

-2 Tbs olive oil

-juice of 1 lemon

1/4 tsp of salt

dash of cayenne




To prepare the ricotta, chop yellow onion and saute with 1 Tbs olive oil.  Add sauteed onion, soaked almonds, garlic, water, olive oil, lemon, salt, and cayenne to the food processor.  Blend until smooth.  Set aside to firm.  I use this recipe to be the base for  savory tarts as well as a spread for crackers.  I love to mix in fresh garden herbs as well.
